Peanut Butter Marble Cupcakes


Ingredients:

150g butter
90g Peanut Butter
240g caster sugar
4 eggs
240g self-raising flour
10g cocoa powder

Method:

1. Preheat oven to 175 Celsius. Place paper baking cases in muffin tray
2. Combine butter, peanut butter, caster sugar, eggs and flour in a mixer. Beat until smooth and pale, about 2 to 3 minutes.
3. Take out half of batter to add in cocoa powder, mix well forms cocoa batter.
4. Spoon batters alternately into the cases. Bale for 20 minutes or until cook.
5. Remove tray from oven and cool for 5 minutes. Then remove the cupcakes and cool on a rack.

*remarks: can bake about 12 pcs of cupcakes

Digestive Biscuit Base

Ingredients
160g Digestive biscuit (finely crushed)
80g melted butter

Method:
Mix all ingredients until well-blended. Press it onto bottom of a 20cm loose bottom pan. Refrigerate for 15 minutes or until firm.

Ingredients A
625g cream cheese
170g sugar

Ingredients B
40g plain flour

Ingredients C
4 egg yolk
2 1/2 egg white
1 tbsp lemon juice
1 lemon zest

Ingredients D
200g whipping cream

Ingredients E
1 1/2 egg white
20g sugar

Method:
1. Wrap the outside of the digestive biscuit base tin with aluminium foil
2. Cream ingredients A until light. Add in ingredients B, mix until well-blended
3. Add in ingredients C, cream until smooth and light
4. Add in ingredients D, mix until well-combined
5. Whip ingredients E until the soft peak stage, add it into the above cheese mixture and mix until well incorporated
6. Pour the cheese mixture over the prepared biscuit base
7. Bake in water bath at 160 Celsius for 75 minutes or until golden brown
8. Allow to cool, keep refrigerated overnight.

Double Chocolate Cake

Hubby likes chocolate and this is the cake I baked special for him.


Ingredients A
250g butter
200g soft brown sugar
4 eggs

Ingredients B (Sieved)
120g plain flour
5g baking powder
80g cocoa powder

Ingredients C
100g fresh milk mixed with 2 tbsp instant coffee
2 tsp vanilla essence
50g chocolate chips

Chocolate ganache
250g butter
250g cooking chocolate, diced

Method:
1. Cream butter and brown sugar at medium speed until fluffy. Add in eggs one at a time and beating well after each addition
2. Add in Ingredients B and C by using skipping method and mix well. Lastly mix in chocolate chips
3. Pour batter into a lined 9" round baking tin, bake in a preheated oven at 180°C for 30 minutes or until cooked. Remove from mould and leave to cool
4. Double boil butter and chocolate separately until melted and mix them together
5. Spread ganache all over the cake. Cut into slices and serve

Chocolate Cupcake


Ingredients A
200g margarine
250g sugar

Ingredients B
270g plain flour
30g cocoa powder
1 1/2 tsp baking powder
1/2 tsp baking soda

Ingredients C
1/2 tsp coffee paste
4 eggs
180g milk


Method
1. Cream Ingredients A until well-blended. Add in Ingredients B, cream until well-combined.
2. Add in Ingredients C slowly, cream until light and smooth
3. Grease the cupcake mould and sprinkle it with some almond flakes. Pour the mixture into the prepared cupcake mould.
4. Bake at 180°C for 30 minutes

Chocolate Chips Muffins

I'm baking muffins this 2 days and I like this Chocolate Chips muffins....yummy! And here would like to share with you all the recipes of this.


Ingredients:
5 oz (150g) Butter - Softened
5 oz (150g) Castor Sugar
6 oz (175g) Self raising flour
3 eggs
1 tsp Vanilla extract
2 oz (50g) Chocolate Chips

Methods:
1. Pre-heat the oven to 350°F (180°C)
2. Line a 12 cup cake pan, with cup cake papers
3. Crack the eggs into a cup or bowl and beat lightly with a fork
4. Place all the ingredients in a large bowl
5. Beat with an electric mixer for 2 minutes, until light and creamy
6. Divide the mixture evenly between the cake cases
7. Add the Chocolate chips and mix through
8. Bake for 18-20 minutes until risen and firm to touch
9. Allow to cool for a few minutes and then transfer to a wire rack

Chocolate Almond Cookies

I bought an oven last week and can't wait to bake my very first cake and cookies. Here are the chocolate almond cookies and butter cake I baked last weekend.






Ingredients A:
130g butter
110 g brown sugar
1 egg yolk

Ingredients B: (Sieved together)
1/2 tsp baking powder
150g plain flour
15g cocoa powder
50g almond flakes

Methods:
1. Cream butter and brown sugar until just fluffy. Add in egg yolk and stir well

2. Add B and mix into a dough. Mix in almond flakes. Wrap with plastic wrapper and chill for 1-2 hours

3. Remove and cut into 1cm thick slices. Arrange onto a baking tray and bake in a preheated oven at160°C for 15-18 minutes or until cooked

4. Remove and leave to cool. Store in a air-tight container
