Double Chocolate Cake

Hubby likes chocolate and this is the cake I baked special for him.


Ingredients A
250g butter
200g soft brown sugar
4 eggs

Ingredients B (Sieved)
120g plain flour
5g baking powder
80g cocoa powder

Ingredients C
100g fresh milk mixed with 2 tbsp instant coffee
2 tsp vanilla essence
50g chocolate chips

Chocolate ganache
250g butter
250g cooking chocolate, diced

Method:
1. Cream butter and brown sugar at medium speed until fluffy. Add in eggs one at a time and beating well after each addition
2. Add in Ingredients B and C by using skipping method and mix well. Lastly mix in chocolate chips
3. Pour batter into a lined 9" round baking tin, bake in a preheated oven at 180°C for 30 minutes or until cooked. Remove from mould and leave to cool
4. Double boil butter and chocolate separately until melted and mix them together
5. Spread ganache all over the cake. Cut into slices and serve

Chocolate Cupcake


Ingredients A
200g margarine
250g sugar

Ingredients B
270g plain flour
30g cocoa powder
1 1/2 tsp baking powder
1/2 tsp baking soda

Ingredients C
1/2 tsp coffee paste
4 eggs
180g milk


Method
1. Cream Ingredients A until well-blended. Add in Ingredients B, cream until well-combined.
2. Add in Ingredients C slowly, cream until light and smooth
3. Grease the cupcake mould and sprinkle it with some almond flakes. Pour the mixture into the prepared cupcake mould.
4. Bake at 180°C for 30 minutes

Chocolate Chips Muffins

I'm baking muffins this 2 days and I like this Chocolate Chips muffins....yummy! And here would like to share with you all the recipes of this.


Ingredients:
5 oz (150g) Butter - Softened
5 oz (150g) Castor Sugar
6 oz (175g) Self raising flour
3 eggs
1 tsp Vanilla extract
2 oz (50g) Chocolate Chips

Methods:
1. Pre-heat the oven to 350°F (180°C)
2. Line a 12 cup cake pan, with cup cake papers
3. Crack the eggs into a cup or bowl and beat lightly with a fork
4. Place all the ingredients in a large bowl
5. Beat with an electric mixer for 2 minutes, until light and creamy
6. Divide the mixture evenly between the cake cases
7. Add the Chocolate chips and mix through
8. Bake for 18-20 minutes until risen and firm to touch
9. Allow to cool for a few minutes and then transfer to a wire rack

Jusco Day

Last Thursday was Jusco's members day at my area and I'm not as crazy as some of my friends who take a day off just to shop the whole day in Jusco. I got nothing much in my shopping list except the bedsheets and the comforter set.

Since I already pre-booked my bedsheets and comforter set, I walk straight to the toys department without delay to check out the Lego set which I intended to buy for Kendra weeks ago. I saw a woman holding the set I want and that is the last set on the shelve. I waited beside her and when she make up her mind to put back the set on the shelve, I quickly pick it up and walk to the cashier.....hahahaha! Not bad, the set have a 20% discount instead the normal 10% discount. Should thank to my buddy Violet who share with me the Lego sales at Toys R' Us earlier.

BesideLego, I bought 2 sets of Winnie the Pooh bedsheets (70% off) for Kendra and a comforter set for myself. Correlle also have a good deal @ 30% but I didn't get any for myself as I bought mine earlier this year.

A busy week

Some of you may noticed that I seldom online for the past week. Yes, I'm busy taking care my girl and no time for me to go online or update my blog. I didn't send her to nursery last week because her cough is getting worse and I need to send her to the child specialist.

X-ray was taken and thank God that no admission was required. We just need to send her back to the clinic 3 times a day for the nebulization. After the nebulization and the medicines intake, her cough was under control but the phlegm still not clear yet. Will bring her back for the doctor appointment after 2 weeks to check on her progress.

Wish Kendra will recover soon and mommy can have a good rest.

Chocolate Almond Cookies

I bought an oven last week and can't wait to bake my very first cake and cookies. Here are the chocolate almond cookies and butter cake I baked last weekend.






Ingredients A:
130g butter
110 g brown sugar
1 egg yolk

Ingredients B: (Sieved together)
1/2 tsp baking powder
150g plain flour
15g cocoa powder
50g almond flakes

Methods:
1. Cream butter and brown sugar until just fluffy. Add in egg yolk and stir well

2. Add B and mix into a dough. Mix in almond flakes. Wrap with plastic wrapper and chill for 1-2 hours

3. Remove and cut into 1cm thick slices. Arrange onto a baking tray and bake in a preheated oven at160°C for 15-18 minutes or until cooked

4. Remove and leave to cool. Store in a air-tight container

New Spec

I don't like to wear contact lenses because I use to rub my eyes very often. Thus, I will more prefer a stylish glasses than a pair of contact lens. I have few glasses to match with my daily outfits but most of them are with plastic frame. Due to taking care of Kendra, I have to choose plastic frame which is more durable I think compare to aluminum frame.

LeSportsac Again

YAY! Finally I got what I want to widen my collection of Lesportsac. A BIG thanks to my friend Ivy who lend me her helping hand to collect and courier the bags to me. Without her, I think my collection will not be as great as what you see later......
